Eating Interventions ~ Sweet Berry Salad

Yes, we have to have some salad options in our HealthEating” Interventions library. This is so good you will feel like its not supposed to be healthy.

Spinach and mixed greens for calcium and Vitamin K. Berries for a touch of sweet, fiber and Vitamin C. Nuts for protein. Avocado for healthy fats that satisfy and give you a brain boost. Use a vinaigrette of choice or another light flavorful dressing you may like. Avoid heavy dressings loaded with fat and preservatives. Make your own when you can - I did for this one. Many heavy, creamy type dressings are loaded with calories, transfats and sugar. You lose the flavor of the food when you pour that stuff all over a yummy salad like this.

No croutons or cheese here for me! Plant based is best. You will learn why in one of my future postings. But for now, just trust me and enjoy! All you need to do is try it and read a few lines about nutrition along the way. You will learn life long health interventions without even trying.

Sweet Berry Salad

•2 cups of spinach leaves and salad mix

• Sliced cucumbers 

•1/4 c Strawberries, sliced

•1/4 c Blueberries

•1/4 c Pecans

•1 Avocado, cut into pieces

Start with your salad mix as a base, then top with remaining ingredients. Enjoy!

•Optional ~ based on your meal plan~ you can top with feta cheese, shrimp or salmon.
